Butternut Squash Soup

Squash your dinner plans with this fall favorite- dairy free unless you add the garnish! 

Ingredients

  • 2 tbsp olive oil 
  • 1 small white onion, diced
  • 2 tsp minced garlic
  • 1 tsp salt
  • 1/2 tsp pepper
  • 6 cups butternut squash, peeled and cubed
  • 4 cups vegetable broth
  • optional: plain greek yogurt & thyme for garnish

Directions

In a large saucepan, heat oil over medium heat.

  1. Add onion and garlic let saute for a few minutes. Add in salt and pepper.
  2. Add in butternut squash and broth, cover, and bring to a boil.
  3. Once boiling, crack lid and let simmer for 15 minutes or until butternut squash is fork tender.
  4. Using a hand blender, blend until completely smooth. 
  5. Top with garnish desired.
