Dairy-Free Vanilla Ice Cream

Clean, easy, and  simple vanilla ice cream!

Ingredients

  • 2 (15-oz) cans full-fat coconut milk
  • ½  cup pure maple syrup (to taste)
  • 1/2 tsp sea salt
  • 1 Tbsp pure vanilla extract

 

 

Instructions

  • Combine two cans of coconut milk, pure maple syrup, and sea salt in a medium saucepan. Heat over medium heat until creamy. Taste for sweetness and add more maple syrup if needed.
  • Remove from the heat and stir in the vanilla extract.
  • Transfer to a freezer-safe container and freeze for at least 2 hours.
  • Thaw for a few minutes before serving. I recommend serving with fresh berries!

Stays fresh for up to 6 months in freezer.
