Clean, easy, and simple vanilla ice cream!
Ingredients
- 2 (15-oz) cans full-fat coconut milk
- ½ cup pure maple syrup (to taste)
- 1/2 tsp sea salt
- 1 Tbsp pure vanilla extract
Instructions

Combine two cans of coconut milk, pure maple syrup, and sea salt in a medium saucepan. Heat over medium heat until creamy. Taste for sweetness and add more maple syrup if needed.

Remove from the heat and stir in the vanilla extract.
- Transfer to a freezer-safe container and freeze for at least 2 hours.

Thaw for a few minutes before serving. I recommend serving with fresh berries!
Stays fresh for up to 6 months in freezer.
